- I went gluten-free Memorial Day, 2011
- Figured out I have a gluten intolerance by process of elimination of gluten from diet for one month before reintroducing one bite of a regular cookie
- Began to trying to substitute rice flour; quickly figured out that brown rice flour has more flavor and nutrition than white rice flour
- Determined that some baked goods are stable enough without using xanthan gum while it is necessary for other items
- Learned to combine different gluten-free flours to enhance flavor, texture and nutritional components of final products; however, I'm not sure if these combinations would satisfy the nutritional needs of someone with celiac disease. (Find link)
- A year after I went gluten-free, my son determined by process of elimination that he also is gluten intolerant
- By the time my son went gluten-free, I was quite proficient with changing recipes to fit our new dietary needs
- I have since become more proficient and would like to share my knowledge with others
